Bartolomeo Stefani

Stefani was employed in Mantua as a chef by Charles III, Duke of Mantua, and this cookbook and guide to running a kitchen was first published in Mantua in 1662. A testament to early Italian cookery, the recipes include bisottini, minestra di Fagiano, polenta, and calamari. This copy is the only copy recorded in American libraries and was purchased for the Louis Szathmary Collection of Culinary Arts with funds provided by Friends of the Libraries.
